Run a complete workflow in the demonstration
Start with a delivery: the original order, received quantity, discrepancy and usable stock. Continue with a recipe sale and a physical count. You should be able to explain expected versus observed usage while keeping units and reporting periods consistent.
For a restaurant group, include a transfer between two locations. Check dispatch, receipt and discrepancy handling. Ask how a new recipe version and a supplier price change reach each location, including sites that do not use the same product references.

Check requirements against your recipe records
Start with forecast portions and the quantities in the current recipe. Sum requirements across recipes for each ingredient, then deduct usable stock and deliveries confirmed before service. If the recipe specifies prepared weight, apply the measured yield before comparing the result with raw stock.
Then check pack sizes, lead times and the buffer chosen by the restaurant. A calculated requirement is not necessarily an order ready to send. Keep forecast demand separate from case-rounding so that any surplus has an explanation.

An accurate inventory process that is too difficult to complete will have limited value. Include a manager and a delivery receiver in the trial. Observe how they enter a missing item, fix an incorrect unit and trace a variance.
Assign ownership of recipe maintenance, purchasing approval and exception review. During the pilot, track count completion and unmatched references before interpreting changes in food cost. A cleaner data set can change reported figures without representing a physical change in consumption.

Start with quantities, consistent units and the same stocktake boundaries. Observed consumption equals opening stock + receipts + incoming transfers − outgoing transfers − closing stock. It includes uses that need explaining; it is not limited to portions sold.
